
This is a delicious pound cake! Full of pineapple tidbits and coconut it will satisfy any pineapple craving! It is such a delicious cake, moist and full of great tropical flavors. I hope you will try this cake, you will love it!
- 3 sticks of butter, softened
- 3 cups of sugar
- 1 teaspoon salt
- 6 eggss
- 1 teaspoon vanilla
- 1 teaspoon almond extract
- 2 tablespoons coconut extract
- 4 cups flour
- 4 teaspoons baking powder
- 1 cup canned coconut milk
- 1 cup whole milk
- 1 cup pineapple tidbits, drained
- 1/2 cup coconut
For the glaze:
- 2 cups powdered sugar
- 1 teaspoon coconut extract
- water, use 1 tablespoon at a time till you get your desired thickness
- coconut for topping




First heat your oven to 325*
Prepare your pan by spraying with pan spray, then coating with flour.
Now place your softened butter into your mixer bowl with the sugar. Blend till light and well incorporated
Now add your eggs, vanilla, almond and coconut extracts
Now add your coconut milk and milk. Blend well
Now add the flour and baking powder, mix well
Now add the pineapple tidbits and coconut
Now put the batter into pan. (This makes a huge cake, I put one small cake pan so I could not overfill my bundt pan)
Now place the cake into a heated oven,
Bake for 1 hour, then test it and add more time as needed



When your cake is done, remove from the oven and place on a cooling rack


When the cakes are cool it is time to glaze them,
To make the glaze, place powdered sugar and extract into a bowl. Now add water 1 tablespoon at a time to get the consistency you want. (I make mine thick, I like my glaze to stay on the cake)
Now while the glaze is wet, put the coconut on, as much or as little as you like.

Now grab a cup of coffee, a slice of cake and enjoy!
