I used to make this bread pudding at the restaurant where I was a chef. It was a customer and employee favorite! It is a very rich and delicious dessert. Full of blueberries and white chocolate, how can you go wrong?
I made this for my friends recently and it got rave reviews! I hope you try it!
Even though I cut down my recipe , it still makes a lot of pudding but gives lots to share ! I hope you try this!
- 2 loaves braided challah
- 1 quart heavy cream
- 9 large eggs
- 1 tablespoon vanilla
- 1 quart blueberries
- 1 1/2 cups sugar
- 1 tablespoon cinnamon
- 1 package white chocolate chips

There are also eggs, cream, cinnamon, vanilla and the cubed bread. All of which I forgot to photograph!
First, prepare your pan. I use a large foil pan, the kind you would roast in. Spray it well with pan spray and set aside.
Now preheat your oven to 350*
Now prepare your 2 loaves of challah bread. Slice them into 4 slices lengthwise, then turn them on their side and slice into strips then cubes about 1 1/2 inches. Put into a very large bowl, set aside
Now crack the 9 eggs into a large bowl. Add the sugar then whisk together. Now whisk in the quart of heavy cream, vanilla and cinnamon.

Now pour the mixture over the challah bread cubes. Now add the blueberries and white chocolate. Stir gently.
Now pour the bread pudding into the pans. ( this makes enough to fill one very large roasting pan and one 7 inch deep dish pan)
Now place into the hot oven and bake for about 35 minutes or till it seems set in the middle. You may need to bake it 45 minutes. It should look like this photo of the ones I made. You can see it is golden brown and bubbly, yet not dark.

Now it is time to let it cool and then enjoy it!
You can make a rum sauce to serve over it. That is how we served it at the restaurant, it is super delicious. Whether you choose to serve it with a sauce or as is, it is a super delicious bread pudding.
I hope you try this! Enjoy!!
