
My dad loves lemon meringue pie! He saw some lemons in the kitchen and asked me to make one…so the next day I did! He was thrilled with it and ate a piece everyday till it was gone! It was a big hit with him…a win win for me!!
First make your 9 inch deep dish pie crust:


heat your oven to 375*
Prick the crust with a fork, put some parchment on the crust and fill with beans, then bake the crust for 15 to 20 minutes till done.
Prebake the crust, let cool
- 1/2 cup lemon juice
- 3 cups water
- 2 cups sugar
- 6 egg yolks ( save the whites for the meringue)
- 1/2 cup cornstarch
- 2 Tablespoons soft butter
Now in a large saucepan mix your filling ingredients and whisk them together off the heat. Now turn on the burner and cook on medium high till it comes to a boil, cook about 1 minute till thickened.
Now add the 2 tablespoons butter and stir well.
Now pour the filling into the baked pie shell
Now place the 6 egg whites into your mixer. Add 1 teaspoon cream of tartar and 1/2 cup sugar.
With you whisk attachment, whisk till firm peaks form.
Now put the meringue onto your filling till piled high, making sure to cover to the edge all around the pie.
Now put it in a 350* oven for about 15 minutes till nicely browned.
Now cut a slice and enjoy!!
