
It’s zucchini time!! We all have a plethora of zucchini this time of year, from our gardens or friends! This is a great zucchini bread, chock full of pineapple and walnuts.
It makes 3 loaves so you have one for you and one to share and one to freeze. It thaws out perfectly. I always have a few loaves in the freezer to share.
- 3 cups flour
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 1 1/2 cups sugar
- 4 eggs
- 1 cup oil
- 2 teaspoons vanilla
- 1 1/2 cinnamon
- 3/4 teaspoon nutmeg
- 2 cups shredded zucchini
- 1 -8 ounce can crushed pineapple, drained
- 1 cup chopped walnuts

First preheat your oven to 350 degrees
Now spray 3 – 3 x 8 aluminum pans, set aside
Now put your ingredients into your mixer bowl.
Flour, baking soda, baking powder, salt, sugar, oil, 4 eggs, 2 teaspoons vanilla, cinnamon, nutmeg, then zucchini and pineapple.
Mix well, now add 1 cup chopped walnuts.
Now put the batter into your 3 prepared pans




Place the filled pans on a baking sheet.
Now place in your preheated oven
Now bake till finished, 40-50 minutes till a skewer comes out clean


Now let the breads cool on a rack till room temperature.
Now cut a couple slices, grab a cup of coffee and enjoy!
