
This is such a delicious bread! It is a fantastic way to use your summer squash abundance! Once you make this bread you will make it over again!
It is full of squash, cheddar cheese and fresh herbs. Served on the warmish side out of the oven nothing could be more delicious for you dinner time treat. I hope you try this delicious loaf!


- 2 cups flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon herbs ( I used rosemary/ garlic blend )
- 1 small bundle of fresh chives ( you can use a couple green onions if you want )
- 2 eggs
- 1/4 cup oil
- 1/2 cup milk
- 1 cup cheddar cheese, shredded
- 1 cup yellow squash, grated
First preheat your oven to 350*
Now prepare your pan by spraying well
You can make this bread without a mixer. Place your dry ingredients, cheese and chives in a bowl. Mix well, then add the wet ingredients in the middle and stir well.
Put the squash in a colander and squeeze out the excess moisture. ( I just press the squash firmly in the colander, it works well)


Place your batter into your greased 8 x 3 foil pan.
Now place your pan into a preheated oven.
Bake for 35-45 minutes till a skewer comes out clean.
