
This is the end of the cucumber season here in Virginia so it is time to make cucumber pickles! We have had a difficult season for our cucumbers but have manage to get enough to keep us in cucumbers all season long.
This is an easy recipe and a way to make some simple pickles to enjoy with all your summer sandwiches and things that need a little sparkle !
- 8 cups sliced cucumbers(sliced thin)
- 2 onions, sliced thin
- 3 tablespoons canning salt
For the brine:
- 2 cups white vinegar
- 1-2 cups sugar
- 1 teaspoon celery seeds
- 1 teaspoon tumerric
- 2 teaspoons mustard seeds
- 1 tablespoon whole allspice
- 2 teaspoons dill seed
- 1 tablespoon whole peppercorns






First prepare your cucumbers and onions. Salt them and set aside to let the salt pull out some of the water.
Now mix your brine ingredients into a large saucepan. Bring the brine to a boil, then turn off and set aside
Now put the cucumbers and onion mixture into a colander then Rince and drain them well
Now put the cucumber/ onion mixture into your jars and put on the lids
Now fill your jars with the brine, then set the pickles aside to cool.
When cool to room temperature place the pickles in the refrigerator and let sit for a few days shaking occasionally.
Now your pickles are ready to enjoy!
