
This is a fantastic muffin filled with cream cheese, covered with streusel and a delicious vanilla glaze. They are like the blueberry muffins but with strawberry.
The dough is a little finicky but well worth the effort! I hope you try these delicious muffins!
- 2 cups flour
- 1/2 teaspoon salt
- 2 teaspoons baking powder’1/2 cup vegetable oil
- 1 cup sugar
- 2 leggss
- 1 teaspoon vanilla
- 3 cups finely chopped strawberries, plus a few tablespoons for the top
For the filling:
- 12 ounces cream cheese, softened
- 6 Tablespoons sugar
- 2 teaspoons vanilla
- 2 teaspoons cornstarch
For the streusel topping:
- 1 1/2 cup flour
- 2/3 cup brown sugar
- 1/2 stick melted butter
First preheat your oven to 350 degrees
Now prepare your muffin pans by placing liners in about 15 cups
Now make the filling. Place the ingredients in a bowl and mix well.
Now make the streusel topping
Now mix flour, salt, baking powder, vegetable oil, sugar, egg and vanilla in a large bowl.
Mix till combined, then add the 3 cups of strawberries and blend well.






Fill your muffin cups with about 1 Tablespoon batter. Now put a small scoop or spoon of the batter into each cup. Now fill the cups again with about 1 Tablespoon batter. Now sprinkle the streusel over each muffin. Now take your reserved strawberries and put a little bit on each muffin.
Now bake for about 25 minutes till a skewer comes out clean.
Now cool on a wire rack.
When cool, mix 2 cups powered sugar, 1 teaspoon vanilla and some hot tap water.
Make a glaze then drizzle it over the cooled muffins.
