Almond Biscotti

I love to make biscotti. I make about 17 different flavors and am always coming up with new ideas for a new flavor!

This Almond biscotti is dee-lish! It is a great addition to your morning routine with your coffee or tea.

  • 2 1/2 cups flour
  • 1 cup sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1 Tablespoon vanilla
  • 1 teaspoon almond extract
  • 1/4 cup oil
  • 1 cup sliced almonds
  • Almonds for the top

First turn your oven to 350

Now prepare your baking sheets. (I have silicone baking mats but you can use parchment to line your sheets.)

Now place all ingredients in your mixer bowl. Turn on low and mix till you have a dough.

Now form the dough into a large log. Flatten the log and brush with water then sprinkle with sugar and sliced almonds

Now place your pans in a hot oven and bake 25 minutes.

Take the biscotti out and let cool 10 minutes. then carefully transfer the loaf to a cutting board. Use a large serrated knife to slice through the loaf cutting about 3/4 inch slices.

Now place the cut biscotti on their side and bake for 10 minutes.

Let cool and then enjoy!
