Corn Bread Pudding

My mom loved corn pudding. It appeared at every holiday table! Sometimes you have to make new traditions and this is one of mine.

This is a really yummy take on corn pudding. It includes everything traditional corn pudding has with a twist!

I hope you try this delicious dish!

  • 1/2 half onion, chopped
  • 2 Tablespoons butter
  • 1/2 teaspoon thyme
  • 1/2 teaspoon rosemary
  • 1 – 15 oz. creamed corn
  • 1 can of Nibblets corn (or a regular can of corn well drained)
  • 1 cup cream
  • 2 eggs, beaten
  • 1 teaspoon baking powder
  • 1/2 cup shredded parmesan cheese, or a cheese of your choice
  • 2 cups cubed French bread
  • 1/2 teaspoon of salt and pepper

Sauté onion in the 2 tablespoons butter, then place in a large bowl.

Now add all the ingredients into the bowl, then mix.

Place the corn mixture into a greased baking dish. (about the size of a deep dish pie)

Now bake at 350* for 45- 50 minutes till golden brown.
