THANKSGIVING 101:

If you are an onion lover, these are for you.
They take a bit of time to make, but can be made ahead as they warm up beautifully.
- 6 medium sweet onions (more if you are having more guests)
- ground beef (cooked with peppers and onions that you have prepared ahead of time, or you can use sausage if desired)
- 1/2 cup breadcrumbs
- 1 large egg
- 1/2 cup of shredded cheese




Peel the outer skin off the onions. Place them in a pot of water and boil them for about 15 minutes. Remove the onions and let them cool enough so you can handle them.
When cool, slice the stem end of the onions, also slice about 1/4 inch off the top, making it large enough that you can scoop out the middles. You want to leave 2-3 rings. Tuck a piece of onion into the bottom to fill the hole at the bottom.
Now take 2-3 onion middles and chop them up into small pieces. Save the rest of the onion middles for another time.
Now place the chopped onions, eggs, meat and breadcrumbs and cheese in a large bowl. Mix well.
Use a big spoon to fill the onions, heaping them slightly.
when they are filled, drizzle with olive oil. Place in a 350* oven
Bake till golden.
Now serve and enjoy! (you can make these a few days ahead of time, they are delicious reheated!)
