Baked Acorn Squash

THANKSGIVING 101:

Baked acorn squash is an interesting addition to the holiday table. This is a refreshing take on a traditional dish.

  • 1 acorn squash (this will give you 4 slices, roast 2-3 more if you are having more guests)
  • ricotta cheese
  • fresh cranberry sauce (we made this previously)
  • 1/2 cup roasted pecans
  • honey to drizzle on top

Microwave your acorns for about 5 minutes. Let them cool.

When cool, slice each squash into 4 even rings

Now place these on a baking sheet lined with parchment paper and put them in the oven.

Drizzle them with olive oil.

Now bake in a 350* oven till they take on a roasted color.

When they are roasted, let them cool, place them on a plate.

Place a dollop of ricotta cheese on top. Then put some of your cranberry sauce on the ricotta. Now place pecans on top. Then drizzle with honey.

Now is the time to enjoy!
