PUMPKIN ROLLS

THANKSGIVING 101:

Pumpkin rolls are a holiday favorite in my family and for my customers. They are simple to make yet so delicious you would think they would be difficult.

  • 3/4 cup flour
  • 1 cup sugar
  • 3 eggs
  • 2/3 cup pumpkin
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon cloves
  • 1/4 teaspoon salt

Place all ingredients in a large bowl.

Use a whisk to blend the ingredients together.

Now prepare your pan.

You need a cake roll pan. This is a Wilton pan, 15.25 ” x 10.25 ” x .75″.

It is the perfect size for pumpkin roll or any other cake you want to make a roll.

Cut waxed paper(not parchment paper) then spray the pan with pan spray, now place the waxed paper in the cake roll pan.

Now lightly spray the waxed paper.

Now you are ready to place the batter in your pan

Spread it gently to fill the pan. (I was making 2 batches, you will have enough batter for 1 pan)

Now bake at 375* for about 10 minutes.

Now prepare your dish towel for the cake. I always use a cotton dish towel that has no nap. In other words, no fluffiness! LOL

Just plain old cotton dish cloth.

Use a small sifter and sift a heavy layer of powdered sugar .

When the cake comes out of the oven immediately turn it out onto the powdered cover towel, then pull off the wax paper very carefully now roll up the cake in the towel

Now after rolling up your cake, place on a cooling rack and let them cool completely.

While your cake is cooling make your filling

  • 8 ounces cream cheese, softened
  • 6 tablespoons soft butter
  • 2 1/2 cups powdered sugar

Place the butter and cream cheese into your mixing bowl.

Whip it till it is well blended

Now add the powdered sugar and blend till light and fluffy

When you cake is cool, carefully unroll it

Now spread your filling carefully onto the cake, making sure to get filling in the crease where it is folded over. Just gently lift up the cake and stuff filling in it

Now roll up your cake and enjoy!!
