12 DAYS OF CHRISTMAS COOKIES: TASTE OF SPRING STRAWBERRY COOKIES

These are my strawberry cookies…they are a little taste of spring in the start of winter!

The strawberry glaze you put on at the end makes them burst with strawberry flavor!

They are a great addition to your holiday baking!

1 cup butter
1 1/2 brown sugar
1/2 cup sugar
2 eggs
2 teaspoons vanilla
1 teaspoon salt 1 1/2 teaspoons baking soda
1 teaspoon baking powder
3 cups flour
1/2 cup freeze dried strawberries (I get these on Amazon)
1 heaping Tablespoon strawberry powder (I get this on Amazon)
8 ounces white chocolate chips

First heat your oven to 350 degrees

Now place the butter, brown sugar and white sugar into your mixer bowl

When well creamed add the 2 eggs and the vanilla, mix well.

Now add flour, baking powder, baking soda, mix well

Now add the freeze-dried strawberries, the strawberry powder and the white chocolate chips

Now it is time to scoop. I used a medium cookie scoop…..about 4 tablespoon size

Now line your baking sheets with parchment or a silicone sheet.

Now you are ready to scoop your cookies.

Now put the trays in the oven, I have 3 racks so I can bake 3 trays at a time.

Bake for 8-10 minutes, take out of the oven and let them cool, when cool, place on a cooling rack

2 cups powdered sugar
1 Tablespoon or so of water
1 teaspoon of strawberry emulsion

Now take about 2 cups powdered sugar, 1 teaspoon of strawberry emulsion and a tablespoon of water, more if needed. Whisk together make sure it is thin enough to drop off a fork, yet stiff enough to stay on the cookies. Now add sprinkles of your choice as you work on the glazing, as it sets up pretty quickly.
