12 Days of Christmas Cookies: Fig Walnut Biscotti

This is my Fig/Walnut Biscotti. I love to make Biscotti! They are very delicious and go with coffee, tea, hot chocolate or wine!

I love to experiment with my recipes and come up with new flavors, which I did with this one last year.

This is not a traditional Christmas cookie but I love to have lots of variety on my trays. I hope you try them!

  • 1 1/2 cups sugar
  • 1 cup oil
  • 1 Tablespoon rum extract
  • 4 eggs
  • 5 cups flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 bag of dried figs
  • 1 cup chopped walnuts

Place sugar, oil, eggs and extract into your mixer bowl. Mix well.

Now add the flour, baking soda, baking powder and salt. Now mix well.

Now add the chopped figs and walnuts.

Now you need to form the dough into a log

Now preheat your oven to 350 degrees

Now prepare your sheet pans(you will need 2) Line them with parchment or silicone mats

Now sprinkle your counter with flour(I use a small sifter, works great)

Now place the dough on the flour covered counter. Sprinkle flour on the dough as well. Now use a bench scraper or your hands and fold the dough over on itself a few times.

Now pat the dough into a log about 16 inches long and about 3 inches wide

make it as rectangular as you can, then lightly mark your log to get 3 even pieces.

Now take 1 piece and place it on your pan. (see photos above)

Now pat the dough out as shown in the photos

After the logs a formed(you will have 3 portions, place 2 one sheet pan and 1 on the other sheet pan)

Now take a pastry brush(not a silicone one) and a small bowl of water. Brush your loaves all over the top, now cover them with plain sugar

Now place the sheet pans in the oven

Bake 25 minutes the first bake. Take the pans out and let the logs cool about 10 minutes till you can handle them, keep the oven on

Place the baked logs on a cutting board, using a large serrated knife, slice a little piece off each end of your loaf, then slice the loaf in 3/4 to 1 inch slices.

Now place each biscotti on its side on your baking sheets as shown in the pictures.

Now bake then 10 more minutes.

when they come out of the oven, let them cool completely on the pans.

Now your biscotti are ready to place on your cookie tray. Enjoy!
