Pineapple Pound Cake

This is a delicously moist pound cake. I like the texture and love the glaze! I hope you will enjoy making this cake!

  • 1 cup vegetable oil
  • 3 cups regular sugar
  • 6 large eggs
  • 3 cups all purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup crushed pineapple, undrained
  • 1 teaspoon vanilla

place oil, sugar and eggs into your large mixer bowl. with the paddle attachment, whip till somewhat thickened.

after mixing, add flour ,baking powder,salt,crushed pineapple and vanilla.

mix till well blended.

prepare your bundt cake pan by spraying it well and coating with flour.pour your batter into the pan, now bake at 350 for 1 hour, check and see how it is baking, then bake for the additional time necessary at 10 minute increments.

while the cake is cooling prepare the glaze.

place in a small saucepan 1/2 cup pineapple juice, 1/2 cup bown sugar.

bring to a boil then boil a few minutes till it thickens slightly.

now poke the cake with a skewer and brush the glaze onto the cake.

let it cool completely…then ENJOY!!
