Blackberry Pie

We have over a 1/4 acre of blackberries so you get gazillions of them over the season! What do you do with them? You make blackberry pies by the tons!

  • 3-4 quarts of blackberries
  • 1 1/2 cup sugar
  • 1/2 – 3/4 cup of flour

for the crust:

  • 2/3 cups shortening ( I like Crisco)
  • 2 cups of flour
  • 1 teaspoon salt
  • 1 Tablespoon sugar (optional)
  • cold water

To make the crust, place thte flour into a large bowl, add salt and sugar, cut the shortening into the flour mixture till it looks like peas. Now add cold water 2 tablespoons at a time till it comes together. You want enough water to make a nice dough but not so much that it feels wet. (You can also use premade deep dish frozen crust ) Now divide the dough and roll 1 part for the pie tin and one part for the lattice top crust

Now combine the blackberries with the sugar and flour. Now place the berry mixture into the prepared crust. Now make the lattice crust. After the lattice is in place, trim the edges, then brush the crust with cream and sprinkle it with sugar.

This filling made one large pie and one small 4 inch pie as well. Now bake the pies at 375* for about 45 minutes or so. I always put a parchment lined sheet pan under the pies to catch all the drips.

Now cool the pie and enjoy!!
