Blueberry Muffins…yummy!

I have made these muffins for many years. I made them in the large Texas sized muffin pans for the farmers markets, the bigger the better for them! lol

This is a very simple recipe. You can stir it up in a large bowl and do not need a mixer. For home use, I have made them in a regular muffin pan, which gives you enough for about 15 muffins, so if you have 2 pans you can fill 3 muffins in the second pan. If you choose to bake 3 more, place them in the middle of the 2nd pan.

  • 2 cups flour
  • 3/4 cups sugar
  • 2 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 eggs
  • 1/4 cup buttermilk
  • 1/2 cup oil
  • 2 teaspoons vanilla
  • 1 1/2 cup blueberries, frozen or fresh

Place all ingredients except blueberries, into a large bowl and stir till blended.

Now stir in the blueberries, if using frozen, do not thaw them.

Now scoop the batter into the muffin cups.

Sprinkle each muffin with a teaspoon of sugar.

Place into a hot oven, bake about 35 minutes or till a skewer comes out clean.

Now let cool, then enjoy!
