
I love to roast spaghetti squash! It is easy and delicious. You can use it in place of spaghetti noodles.
There is no recipe for this, just technique.
I like to microwave the whole squash for 6-8 minutes, depending on how big it is. Mine was huge so I went minutes.
After you microwave it, be very careful and use a very sharp knife to cut though the squash, standing on end. You can cut it on its side if you find that easier for you. Whichever way you do it, cut it in half.
Now scrape out the seeds and middle. Place it on a baking tray lined with parchment, then put olive oil and the spices of your choice, then turn it on its cut side and roast in a 375* oven for about 45 minutes. The outside of the squash may get dark in places, that is normal. Now carefully turn the squash over and roast for about 10 – 15 minutes more.
Now let it cool long enough for you to handle it (I put mine in a folded kitchen towel)
Now use a fork to shred out the spaghetti squash strands into a dish.

That is all there is to it, it is so worth the little bit of time it takes.
This is ready to eat, or you can package it up and freeze it. It freezes perfectly.
