
This is one of my customers favorite breakfast treats at the former farmers markets. I would get orders for a whole sheet pan of these! It has a very thick buttery, cinnamony topping that is so delicious. It is simple to make and delicious to eat! I hope you try it!
- 3 cups flour
- 1 cup sugar
- 4 teaspoons baking powder
- 1 teaspoon salt
- 2 eggs
- 1 cup milk
- 4 teaspoons vanilla
- 1/2 cup vegetable oil
For the crumb topping:
- 5 cups flour
- 1 tablespoon cinnamon
- 2 cups melted butter
- 2 cups brown sugar






First preheat your oven to 325*
Now prepare your pan by spraying it with pan spray.
Now place the all the cake ingredients into your mixer bowl and blend till smooth.
In a separate large bowl mix the topping ingredients. 5 cups flour, 2 cups brown sugar, 1 tablespoon cinnamon and the 2 cups melted butter. You will be able to stir it at first, then use your hands to get it all mixed, making sure you get to the bottom of your bowl to get all the flour incorporated.
Now place the batter into the sprayed sheet pan. Now using your hands, crumble the topping over the cake batter, using all the crumbs and in a heavy fashion onto the batter.

When you have the crumbs on the cake batter, place your crumb cake into the hot oven and bake for 25 minutes. Turn your cake around half way through baking.

At this point you can sprinkle the top with powdered sugar, but I stopped doing that when my customers said they wanted to eat it right away while shopping the markets and didn’t want to get covered with powdered sugar!! LOL I don’t think it adds anything to the cake, but you can feel free to do it if you would like.


Now grab a cup of coffee and a chunk of crumb cake, then enjoy!!
