Garlic Smashed Baby Potatoes

THANKSGIVING 101!!

This is a delicious way to make a potato side dish for your holiday table!

This side dish is simple to make. I hope you try it.

  • 1 bag of small potatoes
  • garlic (I now use the garlic in the jar as I don’ use a lot and throw most heads of garlic out…lol)
  • olive oil…for roasting
  • butter
  • shredded parmesan cheese(or whatever cheese you would like)

Wash your baby potatoes. Place on a lined baking sheet, coat with olive oil. Now place them in a 365* oven and roast till tender, about 25-30- minutes.

when roasted, take out of the oven and use a solid spoon to smash each potato.

Place a dollop of butter and a small spoon of garlic on each potato. Now sprinkle the potatoes with salt and pepper to your liking.

Now place the potatoes back in the oven for about 10 minutes.

Now is time to place the potatoes in a serving dish, sprinkle with parmesan cheese and then sprinkle with chives if desired.

Now enjoy!
