7 Up Pound Cake

A delicious and refreshing cake

This is a great cake! I made this yesterday on the fly to take to my brother. It took a bit to bake, but all total from start to finish only about 3 hours. Then I put it under our kitchen fan to speed up the cooling process. It turned out fantastic! I hope you will try this too!

  • 4 cups sugar
  • 2 cups butter ( 1 lb. ) softened
  • 10 eggs
  • 1/2 cup 7 Up
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla
  • 1 teaspoon lemon extract
  • 4 cups flour

Place butter and sugar in your mixer bowl. Whip till light and fluffy. Now add the eggs, whip them in. Now add the 7 up, baking powder, vanilla and lemon extract. Blend well. Now it’s time to add the flour. Mix it on low till it is incorporated. Now you are ready for the pan.

Spray or grease your pan well. Sprinkle with flour. Fill your pan.

Now place the cake into a preheated 325 oven. Bake for 1 1/2 hours or till a skewer comes out clean.

Now place the cake on a rack in the pan till it is cool enough to remove from the pan.

Now it is time to grab a big cup of coffee and a nice slice of cake and enjoy!!
