Chocolate Chip Biscotti

I love to bake biscotti, which is a twice baked cookie. They are so easy to make and very delicious! I have over 15 varieties and am always thinking up new ideas! (It is addicting to create recipes!) This is one of my most popular flavor. Try it …it may be your favorite too!

  • 2 cups sugar
  • 1 cup butter, softened
  • 1 Tablespoon almond extract
  • 4eggs
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 7 cups flour
  • 1 bag mini chocolate chips (mini chips work best)

Place butter and sugar in your mixer bowl and whip till well incorporated, add eggs. Add the rest of the ingredients in. Mix well, then add the chocolate chips.

Dump the dough out onto a lightly floured surface, shape into a big loaf, divide into 3 portions.

After you form and shape the loaves, lightly brush the tops with water, using a pastry brush, then sprinkle the loaves with sugar. Now place in the oven and bake for 25 minutes. Let cool about 15 minutes.

After it is baked, let cool about 15 minutes. Now place on a cutting board and slice the biscotti into 1-inch-thick slices. It is very important to use a serrated knife and saw through the biscotti loaf. Place back onto the baking sheet on their side. Bake for 10 minutes more.

Now cool completely on a rack. Grab a biscotti, a big cup of coffee and enjoy!
