I love to make pound cakes! You can make so many varieties to have a new taste treat every time you bake one! This is a fantastic cake! I used some lemon cookies from Germany that I bought at Aldis. They taste great! This cake has cream cheese and lemon pudding which makes it very moist and delicious. You add a simple glaze when it is cool and then you sprinkle cookie crumbs to make it soar over the top!
Preheat your oven to 325*
- 3 cups sugar
- 3 sticks butter, room temperature
- 8 ounces softened cream cheese
- 6 eggs
- 3 cups flour
- 1 small box lemon pudding
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 Tablespoon lemon extract
- 1 large pack lemon cookies, crushed (I put them in a zip lock bag and whack them with my rolling pin)
Place butter and sugar into your mixer bowl. Cream till fluffy. Now add cream cheese, cream for a bit till incorporated. Now add eggs and lemon extract then mix well. Now add the flour, pudding mix, baking powder and salt till incorporated. Now add the crushed cookies, reserving about a 1/2 cup for the finished cake.
Prepare a large Bundt cake pan by spraying with a really good pan spray. Now add the batter and spread it out on the top just enough to not have big lumps.
Now is time to bake!
Place the cake in the preheated oven and bake for about 1 1/2 hours. I like to check it at 1 hour and see how much more it needs to bake. I check it at 10-minute intervals until the skewer comes out clean.
Now that the cake is cooled, it is time to make a simple glaze.
- 2 cups powdered sugar
- 1 tablespoon milk
- 1 teaspoon lemon extract
Whisk till smooth. Do not make it too runny, you can add a little bit of milk at a time to get to the desired consistency. Now turn the cake out onto your cake plate. Now drizzle the glaze over the cake and immediately sprinkle with crushed cookie crumbs.
Now it’s time to get a slice of cake, a cup of coffee and enjoy!
