
This is a good apple bread. It is full of chopped apples and pecans! The streusel really makes this bread special. It is good for snacking or toasted then smeared with butter or cream cheese for breakfast.
This makes more batter than the pan will hold, so you will have some for another small pan or a cupcake liner. ( with a double batch I got enough batter to bake a small loaf with some of the batter from each pan)
Pre-heat your oven to 350*
Grease and flour an 8″ x 3″ bread pan (set aside)
I made a double batch, so if you want 2 loaves, just double everything.
- 1/4 cup butter
- 1/4 cup sugar
- 1 egg
- 2 cups cake flour ( you can make this by taking out 2 Tablespoons of the flour and adding 2 Tablespoon corn starch)
- 1 1/2 teaspoons baking powder
- 3/4 cup milk
- 2 apples peeled
- 1 cup chopped pecans
For the crumb topping:
- 1/2 teaspoon cinnamon
- 1/4 cup all purpose flour
- 1/3 cup brown sugar
- 2 Tablespoons cold butter
Place all the crumb topping ingredients in a bowl. Use a fork to blend and mash the ingredients till it forms crumbs. Set aside.
Now place the butter and sugar in your mixer bowl and cream together. Now add the egg and whip it up well. Now add the flour, baking powder, cinnamon, then add the milk and blend together. (it is a thick batter) Now add your chopped apples and pecans.




Now sprinkle crumbs on the loaf.
Place in the pre-heated oven and bake for 40-45 minutes or till a skewer comes out clean.



Now grab a slice and a cup of coffee and enjoy!
