Farmhouse Meatloaf

We love meatloaf! It is simple to make, makes a lot for dinner and then for leftovers or to put in the freezer. Everybody has their own version of meatloaf, this is mine!

  • 2 1/2 lbs. of ground beef (I use 85% for meatloaf)
  • 1 yellow, red, or green pepper, diced (I used yellow)
  • 1 medium onion, chopped
  • 1 egg
  • 1 cup bread crumbs
  • 1 can diced fire roasted tomatoes
  • 1 tablespoon tomato paste
  • 1/2 cup ketchup
  • salt, pepper, onion powder, dried parsley to taste

Sauté the onion and pepper till softened, let cool.

In a big bowl, place all of the ingredients as well as the cooled veggies. Now mix till well combined. Pat the meatloaf into a 9 X 13 pan, leaving about 2 inches on one end. Pat the meat mixture well to form your loaf. I pat and push the meat till I can’t feel any empty pockets in the meat mixture.

Now combine 1 cup ketchup and 1/4 cup brown sugar till well combined. Spread over the loaf, then bake in a 365* oven for about 45 minutes. Let it cool for about 10 minutes, then slice and enjoy!

The topping is my favorite part!! LOL
