Pear Bread

This is my pear bread. It is something I came up with for the farmers markets. Pears are in season during the time that apples are, and you can use fresh pears or canned pears, both work perfectly. I used canned pears today.

This has delicious flavors of cinnamon with a hint of ginger. It makes 2 loaves, one to eat and one to freeze or share. I hope you try it; you will love it!

Drain the pears well, save out 12 nice slices for the top of the breads. Chop the remaining pears and save them to add to the batter.

Now add all ingredients to the mixer bowl. Mix till well incorporated. This batter will be thick. Add the chopped pears.

Now spray 2- 4 x 8 baking tins. I use disposable aluminum pans, they are great, easy to use, and I wash them after each bake. I have lots of these, as well as hard aluminum pans, I just seem to use my disposable pans. I am sure this is from all the 30+ years of baking in my bakery…. LOL

Now divide the batter between the 2 pans, now place the sliced pears across the top of the loaf as shown. You will use 6 slices per loaf.

Now is time to put them on a sheet pan and pop them into your pre-heated oven. Bake them for 45 minutes. Check them with a skewer, if they are browning too much, cover the loaves with tin foil and bake for another 15-30 minutes. I had to bake mine 45 minutes, cover with foil, then bake 15 minutes, then 15 minutes more. You never know how long you may need to bake items; a skewer is your friend!

Now take the breads out of the oven and let them cool on a cooling rack.

We are going to make a simple glaze for your loaves.

  • 2 cups powdered sugar
  • 1 teaspoon of vanilla
  • 2 or 3 tablespoons heavy cream

In a bowl, mix the powdered sugar, the cream and vanilla together with a fork till you get a glaze of your desired consistency. I like mine thick, but loose enough to fall off the fork when I glaze it. I glazed mine while slightly warm, I was in a hurry…lol

I came back and re-drizzled them, which was better.

Now grab a slice and a big cup of coffee and enjoy!!
