Cowboy Cookies

This is my version of a cowboy cookie. They have oats and flour plus lots of chocolate chips and nuts! They are easy to make and delicious! I make them with an ice cream scoop, you could make them with a cookie scoop, but they won’t be as dramatic as a huge cowboy sized cookie! Go big or go home! LOL

  • 1 cup butter, softened
  • 1 cup sugar
  • 1 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 2 cups flour
  • 2 cups oats
  • 2 cups chocolate chips (1 package)
  • 1 cup nuts, pecan pieces or walnuts

In your mixer bowl, put the butter and both kinds of sugar. Mix till creamed. Now add the eggs and vanilla, mixing well. Now add all ingredients except chocolate chips and nuts. Now add the chocolate chips and nuts.

Now that your dough is made, time to scoop it out. I used 3 baking sheets lined with parchment paper.

I scooped out 8 cookies per sheet, use the photos as your guide. These are big cookies and they do spread, so putting them 8 on 2 of the sheets, then 4 on the 3rd. sheet. You should get 20 cookies, you may get 19 and one skimpy one, which is what I got. I took the partial cookie that was in the scoop then pinched a bit off of several cookies to make a full cookie for the 20th one. (That is a common practice for me as I hate to waste a cookie!!)

Now pick your favorite cookie, get a big cup of coffee and enjoy!!
