These are a simple and impressive addition to your Thanksgiving table! They were one of my most requested items for holiday tables at the markets. You can make bread sticks or pan rolls. I always sprinkle the pan rolls with oats, I just like that! I hope you will try these! You will love them!
- 1 cup water
- 1 cup milk
- 1 1/2 sticks butter, softened
- 2 Tablespoons yeast
- 1 1/2 cup whole wheat
- 4-5 cups all-purpose flour
- 1/4 cup brown sugar
- 1/4 cup honey
- 2 eggs
- 1 cup oats (plus some to sprinkle on the rolls)
- 2 teaspoons salt
Gather your ingredients. Warm the milk, water and butter, do not overheat. Add this mixture to your mixing bowl. Add the yeast, brown sugar and honey, let it sit for a few minutes while measuring out your flours.
Now add the eggs, whole wheat flour, all-purpose flour and oats. Add the salt, mix the dough till well blended. (I always use the full 5 cups of all-purpose flour) Now place the dough in an oiled bowl, cover with a towel and let rise till doubled. (About 45 minutes to an hour)
Now turn the dough out onto a floured surface. Shape into a big log, as shown. Then divide, as shown.
While the dough is rising, prepare your sheet pans. I place parchment on my pans, then very lightly spray it, you can fit 2 sheeves of wheat bread sticks per pan. I used 8-inch cake pans for my rolls.
Now divide your dough log into 8 pieces. This is what I do, make sure you shape the dough, so it is as even as possible. Then cut the dough in half, then cut each half in half, do this one more time till you have 8 pieces, if you follow this technique, you will have 8 pieces nearly the same size.
Now take each piece of dough and roll it into a log. Now cut one piece off the end, which will be your first part of your bread sticks. Then cut the log in half, then each half into 3 pieces. You will have 1 piece of dough to lay on your prepared baking sheet, then 6 sticks. (See the photos for guidance)
Now that you have your sticks all on the baking sheet, take the ends of the piece of bread stick pull them gently up and twist them together 3 times, as shown. This makes your sheeves of wheat bread sticks! Now finish each pan, then take a pair of scissors (This works best) and cut the little “wheat” on the top of the sticks, as shown
Now egg wash your sticks and sprinkle the tips you cut with oats. Let the sticks rise for about 30 minutes.
I made 4 sheeves of wheat bread sticks, then 2 pans of rolls. You can make whatever you would like.
Now bake in a 350 oven for about 12-15 minutes. I use a convection oven, so I always go for the 12-minute mark, then decide if they need another 2 or 3 minutes. The rolls take about 20 minutes to bake, I let them keep rising while baking off the sticks, then bake the rolls.
Now take a warm roll, slathered with butter, and enjoy!!
When the sticks and bread are completely cool, you can wrap then in plastic wrap, (I wrap them 3 times) Then you can freeze them till you need them. They are perfect. When you take them out of the freezer, let them thaw, then wrap them in aluminum foil and heat for about 10 minutes.
