Pineapple Pie

This is for all pineapple lovers out there! This is a pineapple pie, made with a large fresh pineapple and a few simple ingredients. This pie is popular in other countries where pineapples are a staple. It is delicious and you can make it your very own by adding a few other ingredients like coconut, that would make it a pina colada pie!

I hope you try this pie! It is yummy!

For the crust:

  • 3 cups flour
  • 1 cup Crisco
  • 1 teaspoon salt
  • 2 Tablespoons sugar

For the pineapple filling:

  • 1 fresh pineapple, peeled and cut into small cubes
  • 1 1/2 cups water
  • 1 teaspoon cinnamon
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 2 Tablespoons butter
  • 1-2 teaspoons rum flavoring

Heat your oven to 375*

First, peel and cube your pineapple. Place the chunks into a large pan. Add the sugar and brown sugar. In another bowl place the water and the cornstarch, stir till well blended, then add it to your pan with the pineapple. Cook on medium high till it thickens, stirring constantly so it doesn’t stick or burn. This will take about 6-10 minutes. If it seems too thick, add a little more water, I used 2 cups all total. Use a large spoon to chop it up a bit so you don’t have huge chunks of pineapple in your pie. When cooked, add your butter and the rum flavoring, then pour it out onto a sheet pan to cool. Cool completely. I let mine cool on the counter for about 10 minutes, then I put it in the freezer for about 30 minutes.

While your filling is cooling, time to make your pie dough.

Place your flour, shortening, salt and sugar in a big bowl. Use your pastry cutter to cut in the shortening till it looks like peas. Now I like to finish with my hands, working the shortening into the flour till it looks like the phot above. Now add cold water, a couple tablespoons at a time till you get a nice dough. Don’t add too much, it will make a lousy dough. A little water goes a long way!

Now roll out your bottom crust and place it in your pie pan. I am using a large glass pyrex for this pie, as it has a lot of filling and you need a large pie pan.

When your filling is cool, put it into your prepared pie shell, then make your lattice top crust. When finished, brush the top with cream and sprinkle with cinnamon sugar.

Place in the oven and bake for about 45 minutes, if the crust is getting too brown on the edges, Cover it. I have several crust edge covers, so I put one of them on till the pie is finished, about 1 hour all total.

Now take your finished pie out of the oven and set on a cooling rack, this pie needs to cool before cutting it.

Now grab a slice, get a big cup of coffee, and enjoy!!
