Dad’s Pumpkin Custard Pie

This is a recipe my dad has, and I decided to bake it for him. He likes pumpkin pie but likes it to be a bit “lighter”. This is a good pie; it is simple to make. I hope you try it and enjoy it!

  • 2 eggs, separated
  • 1 cup pumpkin
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon pumpkin pie spice
  • 1 Tablespoon flour
  • 3/4 cup brown sugar
  • 1 3/4 cup milk
  • 1 teaspoon vanilla

First prepare your 9-inch crust.

Now whip the 2 egg whites till peaks form. Set them aside.

Now put all ingredients (except the egg whites) into your mixing bowl. Mix well.

Now fold the whipped egg whites into your pumpkin mixture.

Place your pie shell onto a baking sheet. Now pour this mixture into your pie shell.

Bake at 375* for about 35 minutes. You may need a few more minutes, I bake in a convection oven.

Now let your pie cool, get a cup of coffee and some whipped cream, then enjoy your pie!!
