Pecan Pie

We love pecan pie! I like to make it chock full of pecans. I use chopped pecans in the pie then whole pecans to fill up the top. Pecan pie is easy to make and delicious!

Now heat your oven to 350*

Next make your crusts:

1 cup shortening, 3 cups flour, 2 teaspoons salt, 1 tablespoons sugar

  • 1 cup corn syrup
  • 1 cup brown sugar
  • 3 eggs
  • 1/2 teaspoon salt
  • 1/3 cup melted butter
  • 1 teaspoon vanilla
  • 1 cup chopped pecans
  • 1 cup whole pecan halves

First thing to do is make your crust. Take 3 cups of flour, 1 cup of Crisco, 2 teaspoons salt, 2 Tablespoons sugar, cut it with a pastry blender. Then use your hands to work it to look like peas. Add cold water to make a nice dough. Start with a 1/4 cup or so, then add a little at a time till you get the right consistency. Now roll out your crust on a floured surface. This will make 3 crusts.

Now place your ingredients except the nuts, into your mixer bowl and mix well. Now place the 1 cup pecan pieces into your prepared crust. Now pour your filling on top of the pecan pieces. Now put your halves into a shallow dish or pie pan, this just helps you pick out the most perfect halves for your pie. You don’t have to do it like this, it is just the way I do it so you get that pretty top.

Now put your pie on a baking sheet, then bake it in a 350* oven for about 30 minutes. Check to see if your crust is browning too fast, then cover the crust and bake 10- 15 minutes more. The filling will seem jiggly but will firm up as it cools.

Now get a slice of pie and a cup of coffee and enjoy!
