Day Four of the Twelve Days of Christmas Cookies…PEANUT BUTTER CUP COOKIES

These are Peanut Butter Cup Cookies! They will meet the needs of all peanut butter cookie lovers! What could be better to bite into a Peanut Butter cookie with a peanut butter cup in the middle. Yum Yum.

These are easy cookies to make, and this recipe makes almost 4 dozen. The most difficult thing is peeling the foil off the peanut butter cups. LOL

I hope you make these cookies for your holiday trays!

  • 1 cup softened butter
  • 1 cup sugar
  • 1 cup peanut butter
  • 2 eggs
  • 2 teaspoons vanilla
  • 4 Tablespoons milk
  • 3 1/2 cups flour
  • 1 teaspoon salt
  • 2 teaspoons baking soda
  • 1 large bag peanut butter cups, peeled of foil

Pre-heat your oven to 375*

Prepare 4 sheet pans, either with parchment or silicone mats. (I love silicone mats; you don’t have to use any spray at all!)

Place the butter and sugar into your mixer bowl. Cream well, then add the peanut butter and continue creaming.

Now add the eggs, vanilla and milk, mix well. Now add the flour, salt and baking soda, blend well.

Now scoop the cookies and place on the prepared cookie sheets.

Bake 375* for 8 minutes. When you take the cookies out of the oven, immediately place a peanut butter cup in the middle, press down gently trying not to break the cookies. I hold each cookie with 2 fingers when pressing the peanut butter cups in the cookies. (I did crack 2..LOL)

Now grab a cup of coffee, a cookie or 2 and enjoy!
