
This is a very old-fashioned cookie, made with a special springerle cookie roller. I was always fascinated when my mom would bring out her special roller and make these simple cookies. I used my momma’s special roller to make these, it takes me right back to my childhood watching and helping my momma. They are usually made with anise, but you can use any flavor you would like. The main thing about these cookies is that you have to let them sit out on the baking sheets for at least 12 hours, then bake the next day. You can order a springerle roller online if you would like to try them or make them with no roller and just cut the cookies into shapes, then let them dry as described above. - 4 eggs
- 2 cups sugar
- 1 teaspoon baking powder
- 3 1/2 cups flour
- 1 teaspoon flavoring, anise or flavor of your choice
Place the eggs and sugar into your mixer bowl, whip till fluffy. Now ad the flour, baking powder and flavoring and blend well.
Put your dough onto a floured surface, the form the dough into a rectangle, lightly sprinkle with flour. Then roll your springerle roller over the dough, with a gentle, steady pressure. When you have them like you want, cut the cookies out with a square cutter and place on your prepared baking sheet.
Now let them sit for at least 12 hours to form the crust.
After they have sat for at least 12 hours, preheat your oven to 250* and bake them for about 30 minutes. They will puff up, but the decorative top will stay visible.
After 30 minutes, take them out and let them cool on a baking rack.

Now grab a cup of coffee and some cookies and enjoy!
