
This is a fantastic cookie! There is a cherry baked in the middle and covered with a whipped ganache. This little cookie packs a lot of flavor in it. They are simple to make and will be a big hit at your next event! I hope you try them, I am sure you will love them!
For the ganache topping:
- 1 cup chocolate chips
- 1 cup heavy cream
For the cookie dough:
- 1/2 cup butter
- 1 cup sugar
- 1 egg
- 1 teaspoon vanilla
- 1 1/2 cup flour
- 1/2 cup cocoa, sifted
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1 jar Maraschino Cherries, well drained on paper towels or 1 jar Morello Cherries, well drained on paper towels




First preheat your oven to 350*
Now prepare 3 baking sheets by ling them with parchment or silicone mats, set aside.
Now place the butter and sugar into your mixer bowl then cream.
Now add your egg, vanilla, flour, salt, baking powder, baking soda and cocoa.
use a small cookie scoop and scoop the cookies. Gently roll into balls then roll in sugar and place them on your baking tray. Use your finger or thump to make an indentation on the middle of each cookie, big enough to place your cherry in. Scoop all the cookies and place the cherry.
Now bake your cookies for 11 minutes.


When the cookies are done, remove from the oven and let cool.
Now is time to make your ganache. Place the chocolate chips in a heat-proof bowl.
Now heat the heavy cream in a saucepan till it barely bubbles to a simmer. Remove from heat and pour over your chocolate chips and let them sit for about 5 minutes. Now carefully begin to stir the chocolate chip mixture until the chips are melted and the chips and cream are fully combined. Now you need to let it sit and cool in the refrigerator for about 30-40 minutes, then stir. Keep this up till you have a thick ganache that will hold its shape when you either pipe it onto your cookies or spoon it onto them.
Now grab a cup of coffee and some cookies and enjoy!
