
This is strawberry bread. It is so delicious and moist. I got this recipe from my friend years ago and have made it ever since! My customers loved it! My family loves it too! It makes 3 loaves if you use 8 x 3.75 foil pans, which are my favorite pans for sweet breads. I buy them in packs of 3 and always have lots of them for baking. I also have aluminum hard pans of this size but bake mostly in the foil pans. You can wash them and use them many times before you need to replace them.
- 1 1/4 cups oil
- 3 cups flour
- 1 teaspoon baking soda
- 1 Tablespoon cinnamon
- 2 cups sugar
- 3 eggs
- 20 ounces strawberries, chopped up
- 1 cup chopped walnuts (you can use pecans)







Preheat your oven to 350*
Now prepare your 3 pans. Spray them well with pan spray, then flour them. Set aside
Place oil, flour, baking soda, salt, cinnamon, sugar and eggs into your mixer bowl. Mix till blended. (The batter will seem very thick, don’t worry, when you add the strawberries, it will be right)
Now add the chopped strawberries and mix well.
Now add the walnuts.
Now divide the batter between your 3 pans.


Place the pans on a baking tray, then into the oven.
Bake for 45 minutes, then test with a skewer and bake at 5-minute intervals till done.
Cool the breads in a pan for about 10 minutes, then turn them out of the pan and place on a cooling rack. Cool completely.
Now to make the glaze: 2 cups powdered sugar, 1 teaspoon vanilla and a little bit of warm water, use a little at a time till you get the right consistency. I like mine just thin enough to fall off the fork for glazing.




Now it’s time to grab a cup of coffee, a slice or 2 of strawberry bread and enjoy!!
