Delicious Chocolate Cake w/ Chocolate Mousse Frosting…soooo good

This is a delicious, decadent chocolate cake! This is probably the first cake I have made that I didn’t even care about the fact that it is messy!! LOL

When you make this cake, make the mousse frosting first and put in the fridge to get well chilled, it actually needs several hours, then you won’t have a messy cake like mine!! LOL

This mousse frosting is so chocolatey and delicious, but next time I am going to make the mousse in the morning or even the night before. After this cake gets well chilled, it is perfect!

I baked my cakes in 3-8 inch pans, but you could use 2-9 inch pans. I like to make cakes with my 8-inch pans so I can have 3 layers. Don’t ask me why, but I love 3 layered cakes, I think they are showy!

  • 2 cups sugar
  • 1 3/4 cups flour
  • 3/4 cups Hershey’s Cocoa ( I used special dark, my fave)
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup milk
  • 1/2 cup oil
  • 2 teaspoons vanilla
  • 1 cup boiling water

First make your mousse frosting.

  • 8 ounces chocolate chips
  • 2 cups heavy whipping cream
  • 1/4 cup powdered sugar
  • 2 teaspoons vanilla
  • 1/4 cup warm water
  • 1/2 cup cocoa powder
  • pinch of salt

melt the chocolate chips in the microwave, set aside.

Mix the warm water and the cocoa powder till smooth, set aside.

Whip the cream and 1/4 cup powdered sugar till peaks form, add the vanilla and the pinch of salt.

Now mix the water/cocoa mixture with the melted chocolate. Now fold some of the whipped cream into the chocolate, gently folding. Now add the rest of the whipped cream into the chocolate mixture till well incorporated, but not so much that you deflate the cream.

Now place all dry ingredients into your mixer bowl. Whisk them a bit, then add the eggs, milk, oil and vanilla. Mix well with your mixer, then slowly add the boiling water, your batter will be very thin.

Now divide into your prepared pans.

Now place into your preheated oven and bake for 20-25 minutes. Do your first check at 20 minutes, especially if you are using 8-inch pans.

When the cakes are baked, take them out of the oven and place them onto a cooling rack for a little bit. Now turn out the cakes onto the rack with parchment paper and let them cool completely.

When cooled, place a bit of frosting on your cake plate, then place your first layer. Now put some frosting on that layer, now place another layer on that cake, frost, then repeat with the last layer.

Now frost the top then sides of the cake.

When the cake is frosted, place it into the fridge for about an hour or 2 till the frosting is set.

Now grab a cup of coffee, a slice of cake, then enjoy!!
