
This is a delicious lemon cake; it will please any lemon cake lover! The mascarpone/cream cheese frosting is the perfect finish for this deliciousness!
My dad loves lemon and he really liked this cake. That is a win win for me!
This would be a fantastic Mother’s Day cake! I hope you try it!
- 1 3/4 cup sugar
- 3/4 cup vegetable oil
- 1/4 cup Crisco shortening
- 2 eggs
- 1 tablespoon lemon extract
- zest of 1 lemon
- 2 Tablespoons lemon juice
- 1/3 cup hot water
- 1 cup buttermilk
- 2 1/2 cups flour, sifted




First heat your oven to 325*
Now prepare 3 8-inch pans (or 2 9-inch pans)
Now add the sugar, Crisco and the vegetable oil into the mixer bowl and blend well.
Now add the eggs, then the rest of the ingredients.
Mix well. Now distribute the batter into your prepared pans.
Place in your preheated oven and bake for 25 minutes, then check for doneness. Add a few minutes more if needed.
Take the cakes out of the oven and let them cool in their pans on a cooling rack.


Now make your frosting.
- 8 ounces mascarpone(softened)
- 8 ounces cream cheese(softened)
- 8 ounces butter(softened)
- about 6 cups powdered sugar
- 1 teaspoon lemon extract
- 1 teaspoon vanilla
Place the mascarpone, cream cheese and butter, blend till creamy.
Now add the powdered sugar and extracts, blend well then whip it up till light and fluffy.
Now place a cooled cake on your cake plate



Add some frosting to the center of the cake layer, smooth out, now add another layer and repeat the process till you have all layers stacked.
Now place frosting on the top layer, carefully spread it to the edge. Now frost the sides of the cake.
Now fill a piping bag and pipe a decorative border. Now you can sprinkles to decorate if desired.
