Fresh Strawberry Pie W/ Cream Cheese

I love a fresh strawberry pie! I made this one for my birthday a few days ago, my dad and I enjoyed it! Strawberry pie is really simple to make. This one has a cream cheese layer on the bottom but if you don’t want that layer, just leave it out.

I hope you try this delicious fresh strawberry pie!

  • 2 quarts fresh strawberries, washed and halved or quartered
  • 1 -9 inch prepared pie crust (either pastry or graham cracker, I used graham cracker)
  • 1 cup water
  • 4 tablespoons cornstarch
  • 1 cup sugar
  • 1 – 3 ounce box strawberry jello
  • 8 ounces cream cheese, softened and mixed with a couple tablespoons sugar

First add the water, sugar and cornstarch into a saucepan. Mix well with a whisk, then turn your stove to medium/high heat and stir and cook till thickened. Now take off the heat and immediately whisk in the strawberry jello. Place into a dish and put in the fridge to chill it while you prepare the strawberries.

Now wash, top and halve or quarter the strawberries, set aside.

Now mix the cream cheese with 2 or 3 tablespoons of sugar. Now spread it into your pie shell.

When the gel has cooled a little, stir it into the strawberries.

Now pour the berry mixture into your pie shell.

Now place the pie into the fridge to chill and set the gel.

You can serve it as is or my favorite way…with a great big dollop of whipped cream!

Now cut a big slice, grab a cup of coffee and enjoy!
