Shepards Pie

This is my version of Shepards Pie. I like to make it in a big skillet that I can do it all in one pan except the making of the potatoes! It is comfort food, great for a cool summer day or a chilly fall/winter day.

  • 2 lbs. ground beef
  • 1 bag frozen mixed veggies
  • 1 onion, chopped
  • 2 cans diced tomatoes
  • 1/2 can tomato paste
  • 5 large potatoes (peeled, sliced, boiled then mashed with salt and pepper to taste)
  • 1-pound shredded cheddar cheese

First sweat your chopped onion in a large oven safe skillet. Now add the ground beef and sauté till browned. Now stir in diced tomatoes and the 1/2 can tomato paste. Add the mixed veggies and stir. Now let it come to a simmer while preparing the potatoes.

Now spread the mashed potatoes over the top of the skillet mixture.

Now spread the grated cheese over the mashed potatoes. Now place the skillet into the oven, bake for about 30 minutes or until the cheese is browned and everything is bubbling.

Now it is supper time!! This is so good; I am sure you will love it. The leftovers are great for future meals and freeze very well.
