This is one of my of customers absolute favorite cake! I have made it with a number of fruits, but blueberry and peach are the most favored. It is a very simple cake, yet quite delicious.
- 1 stick soft butter
- 1 cup sugar
- 1 cup flour
- 1 teaspoon baking powder
- 1 teaspoon vanilla
- 2 eggs
- 2 cups of fresh or frozen blueberries ( you can also use peaches, canned or fresh, both work great)
Prepare your 9″ pan with pan spray and flour.
Place butter and sugar in your mixer bowl. Cream them till light and fluffy. Now add the flour, baking powder, vanilla and eggs. Beat till fluffy.
Place the batter in your pan. With an offset spatula, carefully spread the batter in the pan .This batter is thick. After spreading out the batter as shown above, cover with the blueberries, then sprinkle with about 2 Tablespoons of sugar.
Now bake in your preheated oven for about 35 minutes. I bake in a convection oven, so my times are geared for that. You start checking at 35 minutes, when using frozen berries it will need to bake a little longer.
