Pineapple Upside Down Cake

We love pineapple upside down cake! I love a home made cake batter, some people use a cake mix, which makes a great cake. I grew up making an old fashioned cake with my mom, and that is what I bake, though I found these pans for making individual pineapple upside down cakes for my daddy. I am using the pans I got for him, I am baking memories every time!

For the pineapple pan:

  • 1 stick butter
  • 2/3 cups brown sugar
  • 1 -20 ounce can pineapple rings
  • maraschino cherries

For the cake batter:

  • 1 cup sugar
  • 1/3 cup shortening
  • 1 1/3 cup flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 egg
  • 3/4 cup milk

First set your oven to 350*

Prepare your pan ( You can bake this in a regular pan as well, if you use that, use a round 9-inch pan, or you can also use giant muffin pans, just make sure your pineapple rings will fit in the bottom)

Melt the 1 stick of butter, spray your pan well. Now place the butter in your pan, then brown sugar, then pineapple rings and finally a maraschino cherry into the middle of each pineapple ring.

Now make your batter. Place the sugar and shortening in your mixer bowl and blend well. Now add your egg, baking powder, salt and milk. Blend on low, now add your flour and blend till smooth.

If using individual pans, fill each one about 3/4 of the way full. ( I had enough left to make a small one in another pan)

If you are using a round pan, pour it all in on top of your prepared pineapples.

Now put in your oven the oven and bake for 20 minutes. Test and see if it needs more time, then go at 5 minute intervals till finished.

While your cakes are baking, prepare a sheet of tin foil to turn your cakes out onto. I lightly spray the foil, then fold the edges up slightly. Now get a wire cooling rack ready. When your cakes are finished, place the foil over your pan, place the cooling rack over the foil, then turn them out quickly onto your foil. ( it is important to do this right away or your pineapples will stick in the pan. You do the same thing if you have used a different pan)

Now let your cakes cool, then grab a cake and a cup of coffee and enjoy!!
