
These are oatmeal raisin cookies, one of my many favorites! There are so many cookies I bake, especially at Christmas time. If I bake them, they are my favorite! LOL They are an old-fashioned cookie that I add both cinnamon and nutmeg to, that gives them a delicious flavor that is hard to beat. I used currants in these, but I usually use raisins, either works well. Or, if you don’t like raisins, leave them out, the cookies will still be yummy!
- 1/2 cup soft butter
- 3/4 cup brown sugar
- 1/2 cup sugar
- 2 eggs
- 1 teaspoon vanilla
- 1 1/2 cup flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1/2 teaspoon salt
- 3 cups oats
- 1 cup raisins or currants
- 1 1/2 cup chopped walnuts
- 1/3 cup water




Preheat your oven to 350*
Prepare your sheet pans with parchment or silicone mats (you will need 3)
Now place the butter and sugars into your mixer bowl. Cream together, then add eggs and vanilla. Blend well. Now add the flour, baking soda, cinnamon, nutmeg salt and oats. Mix well. Now add the raisins and the walnuts, blend well. Now it’s time to scoop.

Scoop out the cookies, 12 per tray. I press down on the cookies a bit to flatten them out a little, I find that helps the cookie to not get a big dome in the middle.
Now place the cookies into the hot oven and bake 8 minutes, check and bake 1 or 2 more minutes if needed, but no more than 10.


Cool on the sheet pans a couple minutes, then move them to a cooling rack and cool completly.

Now grab a cup of coffee and a couple cookies then enjoy!
