Peanut Brittle

This is old fashioned peanut brittle. So yummy and very easy to make. You can either use raw Spanish peanuts or use dry roasted peanuts. It is so much better than store bought brittle. You will love it!

  • 2 cups sugar
  • 1 cup Karo syrup
  • 1/2 cup water
  • 2 cups raw peanuts (or dry roasted peanuts)
  • 1 teaspoon vanilla
  • 2 teaspoon baking soda
  • 2 teaspoons butter

First prepare your sheet pan by buttering it, then set aside.

Place your sugar, Karo and water in a deep saucepan. Bring to a boil and cook to just about 285* then put in your raw peanuts (If you use dry roasted peanuts, just stir them in at the very end because they don’t need to cook) stirring constantly till it gets to 300*. Now stir in the butter, vanilla and baking soda. When you stir in the baking soda it will foam up.

Now pour it out onto your prepared baking sheet. Do not use your utensils to spread it out. Just tip the pan in different directions till it spreads out.

I sprinkled a little pink salt over it when it had spread out. This is totally optional.

Now let it cool completely then break it into pieces.

Now get a few pieces and enjoy!
